I was going to start this post by saying “Everyone loves cake!” But guess what? I know the one person who doesn’t. My husband. Yeah.
Malissa and I would happily start everyday with cake batter pancakes, end it with a can of frosting and fill the gap between those two with cupcakes. We may or may not have done that before. And somehow I managed to be married to the one person I’ve ever met who really doesn’t care for any of those things.
But forget about him. Your loved ones probably do love cake! So why not let them have their very own, very special, take-away piece of it? But not just any “here take a quick slice with you!” when they’re on their way out the door. This piece of cake is more like a personal mini cake. And it comes wrapped up all nice n’ neat for them. So forget the Seran Wrap and paper plates, these beauties are much more lovely, much less messy and oh-so-delicious.

Malissa and I fell absolutely in love with these mint berry boxes. They’re pint sized instead of the usually seen quart and the mint color is a fun change from the common turquoise. They were the perfect thing to house my cakes in!
So go ahead and bake your favorite cake in a 9×13″ pan and whip up a batch of your favorite frosting. I always use this recipe except this time I used vanilla bean paste instead of vanilla extract because I just love those dark little flecks. mmm!
Using your berry boxes as guides, cut your cake into pieces that’ll fit the bottom of the box and pieces that’ll fit the top. I ended up doing 2 little pieces and 4 big ones, I was able to use the excess pieces as a bottom layer in 2 and I got 4 total cakes out of one pan.
Cut your parchment paper to about 8″ in width and stuff it in to your boxes.
Insert a small piece of cake and then frost it.
And now put in a big piece and frost that!
These can be displayed out in a variety of ways. I loved how they looked with a paper straw with a message attached.
And I also loved them all bundled up and ready to be taken on-the-go!
However you decided to pass these cakes along to your guests really can’t be wrong because {almost} everyone loves cake!
